Any fellow Horns got a recommendation on a smoker to do brisket, turkey, etc.?

I've got a Weber gas grill that is great for grilling but now I'm considering moving up to the smoker so I can do real "low and slow" cooking... recommendations greatly appreciated.

I am going to save you a ton of time.

You already have a weber and like it. Get the weber smoker and go to this site to get m ore info then you will ever need. The Link

This is a quarter inch steel all the way around, rust guarantee on the firebox, heavy duty thermometer, and optional gas log lighter. I have had this one for years, and it holds heat so well. It is a great smoker and I highly recommend it.

The firebox is directly under the meat, but with the thick qtr inch steel, and built in water pan the temp is easily managed right at 180-250 depending on what you're cooking. The water trough in there keeps everything nice and moist. the smok goes up the sides of the chamber, wraps around the meat, and exits the middle smokestack. It is not direct heat in any way, and this is the best cooking pit I have ever owned.

BBQ Pits by Klose if you got the money this is the way to go. They are made in Houston (welding shop in the Heights) that you can go visit or you can do it all online. They can custom make it anyway you want at just about any size.

This model will run you about $2,000 and will last longer than you will

just a tip from expereience...no matter what brand you choose if you think you are going to get one of the smaller models, step up at least one size. At some point you are going to want to cook something that won't fit into your pit the way you want it to. My pit holds three 15 lb Turkeys but its not tall enought to cook one Turkey in an upright position (ala Beer Can Chicken).

This is my obligatory Big Green Egg suggestion. It's a great smoker and once you get it will become your grill of choice and your Weber, like mine, will sit on the deck largely unused.

I love my New Braunfels Hondo Deluxe. The fire box is round, but the main cooking section is oval shaped which makes for a larger cooking surface. Heavy steel.

It's fairly simple to keep the temp around 200-250, but you can take it up to 600 pretty easy.

760-sq. in. cooking surface
Offset firebox design
Internal smokestack damper for greater temp control
Solid steel front shelf
Convenient fuel access door for easy clean out and adding cooking fuel
Cast-iron grates in both firebox and smoke chamber
Includes grate-lifting tool

Weber Smokey Mountain

When you have to get up at 3 in the morning to check temps, you will want something that is easy to control temp. etc. WSM is a great smoker.
