Beer Chili?

anyone have good variations?

I'm not some huge cook or anything but I made some tonight that tastes so good

was just a very basic Texas Chili but used 2 bottles of Dos Equis as the main liquid

just used chili powder, comino, garlic, onions, oregano, paprika, red pepper, tomato sauce and salt

browned some HEB Angus ground beef with some onions, garlic, salt and pepper

combined everything else with the 2 the bottles of beer and cooked for about 1.5 hours. So simple but just was so good. I should have doubled my portions as I wish I had some left over. The meat was so tender and flavorful...the chili came out thick and rich.

served it over some corn chips with the fresh onions sprinked on top
 
I whipped up a simple Southwestern Chicken Chili tonight, using a bottle of dark Negra Modelo plus 1 cup water for the liquid, along with whatever came in the can of whole, peeled tomatoes I used for the stock. I bought a rotisserie chicken at HEB for the meat, and added a can of tomato sauce, 2 jalapenos, 1 poblano, 1 white onion, 5 cloves garlic, 4 Tbsp chile powder, 1.5 Tbsp cumin, 1.5 tsp salt, 1 tsp pepper, and 1 tsp cayenne pepper.

Oh, yeah, and a can of black beans. HA! You Texans don't know anything about chili.

Not really, but I always bean mine up. (True Yankee.)

That chili was spicy and delicous. I'm not sure I even noticed the beer.
