I have some Pintos soaking and a couple of pounds of Christmas ham in the fridge.

Anyone have any good recipes for Pintos with ham?
 
Don't know where you live, but there's a meat market on N. Shepard in Houston called B & M. They sell the best pinto bean season I have ever had. Soak your beans, dice a medium sized onion, cut your ham in small slabs. Brown the ham and onions at the same time. add water beans and seasoning and simmer for about 6-8 hours and you're good to go. I imagine any pinto bean seasoning would work.
 
I love this one when I have a ham bone:

1 16-ounce package dried pinto beans
1 ham bone
2 tablespoons olive oil
2 1/4 cups chopped onions
2 jalapenos, minced
2 garlic cloves, minced
1 cup ketchup
1/3 cup packed golden brown sugar
2 tablespoons spicy brown mustard
1 teaspoon worcestershire sauce

Soak beans overnight. Bring to boil with hambone and enough water to cover all. In separate pan heat the oil, add onions and sautee, about 10 minutes. Add jalapenos and garlic; sautee a couple minutes. Stir in ketchup, brown sugar, mustard, and worcestershire sauce, bring all to a boil and cook for a couple minutes. Then add it to the pot that has the bean, hambone and water mixture. Stir and cook slow and low until beans are fully cooked. Yum.
 
Really damn good. The ham bone had quite a bit of meat left on it -- I pulled it off (the meat fell off the bone really), and I shredded it and mixed it back in.

My wife was impressed, as were my two 2 year old boys.

(P.S. - soaking the beans then draining them speeds the cooking process, but also lowers the gas output).
