Baked beans

Bye Week

250+ Posts
I want to do some baked beans on the smoker this weekend. However, I hate the sickly sweet pork 'n beans-type recipes that seem to be standard fare at 4th of July cookouts with tons of molasses, maple syrup, brown sugar, etc. I'd like to do something with brisket burnt ends, BBQ flavor, and jalapeno/heat. Anyone have a good recipe that I could, well um, steal? Thanks in advance; pics will be posted...

2 lbs pinto beans, soaked overnight, Fiesta brand Pinto Bean Seasoning, chicken broth, couple of chopped cloves of garlic, salt, black pepper, 1 whole sweet onion (chopped), 1 can ro-tel tomatoes.

This is my base recipe for all beans I make, but I can't really give exact proportions. I just cook them on the stove, and add some of whatever meat I am smoking when it's done.

1 lb. pinto beans(soak overnight)
ham hock
LARGE onion chopped
2-3 fresh jalapenos w/seeds
1 small habanero w/seeds(or not)
3-4 cloves garlic minced
cumin, oregano, chili powder, salt, black pepper(tsp. or so of each or to taste)

Add all ingredients to soaked beans. Bring to a boil on stove. Cover and move to smoker(close to fire box) for 4-5 hours. Uncover, add burnt ends and simmer for another hour. Enjoy!

Depending on your taste, you can also add some stewed tomatoes or RoTel.

Bye Week,
Somewhere on here I have a barracho bean recipe that I think is fantastic, if you want heat and pintos.

My baked bean recipe is not sweet, but it is more tangy I would say, but not hot. So take it for what it is.

I use canned pork and beans, and then add finely chopped onion. Just a plain yellow onion or white, not a sweet onion because the beans are already sweet enough. Then I add a mixture of catsup and mustard. I can't say how much, just enough ot make them tangy. Then I lay bacon over the top of the entire thing and bake them in the oven.
