There was a thread on here a year or two ago, about the Bacon Explosion, and I made it for my sons and my boyfriend. It actually isn't quite as good as you might imagine. It was okay, but nothing I would go out of my way to make again.
Oh Dear Jesus! Could it be there is something greater than smoked ribs and brisket?
I don't think I would ever try that exact recipe, but the very idea of smoking 10 lbs of maple bacon in a lattice work pattern and eating it like jerky calls for the good ole scientific method to be applied: experiment.
I've been experimenting with the recipe and last year for the Colorado Tailgate I made it with ground Bison. It turned out even better than the original seen below. The trick is to throw all kind of tasty **** in the center before you roll it up. I'm going to try mushrooms or Jalapenos and cheese next time.
I did one this weekend a modified version that I call a Pig Bomb. I used a 6 by 6 web of bacon, a pound of HEB Chipotle sausage in a layer, a pound of ground pork in a layer and a tube of Chorizo in the middle. I left the Chorizo at one end and I rolled it up. It was about the perfect side for the bacon to overlap slightly underneath.
Smoked at ~225 on pecan for 2.5 hours then wrapped in foil to finish for 1.5 more. Let it rest for 15 minutes and cut it up. The sausage and pork adds to the pinwheel effect. I have to say it was one of the tastiest things I have ever made. A friend dropped in unexpectedly about when I was ready to serve and ate nearly half of it.
