That looks bad ***. Another thing i often do is take the whole backstrap and cut it open to where it lays pretty flat. I stuff is with spinach, blue cheese, bacon and mushrooms. Tie it up with butchers twine, sear it about 4 minutes per side, remove from pan, deglaze with a cabernet and some veal stock and thyme. Enjoy.

Oh, and you can also cut it into steaks, pund flat, batter in Central Market green chile corn chips that you have crushed, and make CFS out of it. top with green chile cream gravy. smooth.
 
I've done the bacon and jalapenos--- pretty good without all that though

save all the bacon and jalapenos for dove

Ironically when I went to HEB to grab some of their carne guisada makings earlier, a white wing cannonballed right into my windshield. The good news is that my windshield escaped unharmed save for a little panic poo on birdie's part. The bad news is that I'm now fairly confident that one of the HF moderators may be feeding information about me to the avian underground.
 
My outdoor cat has taken out 3 doves in the last year--my wife would flip out if I ate the cat's kill ( 2 were still alive). I am often tempted to take out all those that I see on the fence.
