Baby Backs

I bought a couple of slabs at the grocery store last night to smoke this w/e. Just wanted to get some input on how to cook these bad boys up. They are already seasoned with BBQ so I guess a rub is out of the question. Should I add a basting sauce as they cook? Any ideas are appreciated! Thanks, Jimmy

Hornian's method for spareribs also works for baby back's, I'll vouch for that. I've been known to make some alterations to that method. I foil the ribs on the grill, especially when I don't have anything else to cook. But when I do that, I usually only let them go about an hour in the foil. Then when I unfoil them, I'll mop on a shot of sauce and turn them upside down, close to the fire for about 30 minutes. That gives them a real nice crust on the outside.

skeeter,

Assuming you are smoking the REEBS, I usually go about 250 - 275 degress and cook for 1.5 hours over smoke + foil for 1 hour + back on without foil for 30 minutes...give or take. The last 30 minutes I baste up real good with my sauce. If'n you want to get fancy you can baste with apple juice or somesuch during the first 2 steps...when you see the bones stickin out the end, they be done.

smoked 3 racks last weekend as follows:
~3hours with air temp at 250 over a drip pan filled with apple juice and apple cider vinegar.
-1 hour in foil with bbq sauce. I let it go a little too long (watchin bball) and the meat pulled a little too far back on the bones. I would say 1hour 10mins max (still at 250F)
1 hour out of the foil to firm up a bit. You can add sauce here if you want a 'bark' on the ribs (again at 250)

All of this is indirect heat and make sure you refill the drip pan after the first 3 hours.
