Baby Arugula/Blue Cheese Salad

NXNW has a good one, the Bitter End had a good one when it was open, so I built my own. Everything was in the salad section at HEB:

Bag of Baby Arugula
Bottle of Blue Cheese Vinigrette
Bag of Carmelized Pecans
Granny Smith Apples (you can buy these presliced if you like)
Red Onion
Blue Cheese Crumbles

Add as much of each item as you prefer, go light on the Blue Cheese Vinigrette (it will overpower everything else very quickly) adding a little at a time till it is just right.

This is my favorite salad in the world.

The carmelized pecans are the magic bullet in that one. The sweet with the tart of the vinegar, and the salty of the blue cheese -- greatness. I loved that salad at the Bitter End back in the day (it was really the only thing I ever got there, as their kitchen was inconsistent on everything else, but I digress).
