Austin butcher shop or meat market?

Any recommendations? Mrs. Ghost & I have been assigned the catering duties for her parents' 40th anniversary celebration out in Harper in late December. I'm bringing my Weber bullet out to the ranch rather than try & use the FIL's 25 year old offset piece o' junk (I've given up trying to use that thing since everything comes off tasting like mesquite & dieself fuel...his grillin' standbyes).

Anyway, we've been requested to smoke prime rib for 12-14 adults. So we're looking for options to get a good boneless rib roast (probably "choice" but may go "prime" if it's not too outrageous). CostCo has some boneless ribeye roast (a possible alternative that might be acceptable) for about $7/lb.

I know there was a great place off Peyton Gin but I've heard that they might have closed down or maybe they're only selling to restaurants. We've also thought about Central Market.

Based on my experiences, CM will face rape you on price compared to CC. IF you want the rib roast, ask the butcher at CC if they have any with bone-in in the back. I have found the butchers at CC to be extremely helpful. Can someone confirm or deny the closing down of the play on Peyton Gin?

I've always wondered if the costco butchers would handle requests or if they just prepped & wrapped. I'll ask them about it next time we're there.

Since this will be a big meal we're planning on doing a smaller 'dress rehearsal', maybe for Thanksgiving. A 3-4 rib roast would probably be a nice test.

Johnny G's is allsome. They have boudin stuffed bacon wrapped jalapenos that will cleanse your colon.

If you live in South Austin (or don't mind a drive) you can try the Bon Ton Market in Uhland off Hwy 21 (just east of Kyle). They will cut pretty much anything you want, and if you give them some lead time, they can get anything else that they don't have.

Also, Granzin's in New Braunfels has an outstanding meat market. Their angus rib roast is very affordable and has always been a good solid cut of beef.
