Any good pimento cheese recipes?

Price's Spread is OK, but I would like to make my own and I bet that I know just the guys to give me the best!

however, pimento cheese is evil.
 
Good pimento cheese is the tits. I buy the central market kind because I hate mayo and don't keep it around, but I wish I had that recipe.
 
I use this one courtesy of Paula Deen:

1 (3-ounce) package cream cheese, room temperature
1 cup grated sharp cheddar
1 cup grated Monterey Jack
1/2 cup mayonnaise
1/2 teaspoon House Seasoning, recipe follows
2 to 3 tablespoons pimentos, smashed
1 teaspoon grated onion
Cracked black pepper

Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended. It can be used as a dip for crudite or as a sandwich filling.

House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.
 
scottsins, I couldn't agree more... I don't know what it is, but I find pimento cheese to be one of the worst substances considered 'food.'
 
I used to hate it when I was younger, but I like it now. Also, if someone needs a recipe and shows me Jiggy, I am obliged to help.
 
Even easier is to buy shredded sharp or medium cheddar cheese (16 oz), a jar of diced pimento drained and about a cup of good mayo. You may need a little more or a little less. Use it to make grillled cheese sandwiches too.

It would be fantastic made with the fine shredded five mexican cheese blend too..
 
My MIL makes this stuff and it is great. As is typical with great recipies passed down, there is no recipe. However the ingredients are:

Sharp cheddar cheese block
Some pimentos
Good mayo (no HCF brand)
1 Can evaporated milk
Fresh cracked pepper
Salt

Take your cheese and shred it. Buying pre-shredded cheese will make the finished product of poor quality. Put some pimentos in a bowl and mash a few times with a fork. You just want to get them in a little smaller pieces. I usually get a very small maybe two or three ounce jar and use half. Add the cheese, about 8 ounces. Add half a cup of mayo and a quarter cup of the evaporated milk. Add salt and pepper to taste. Adjust the mayo and milk if you like yours more or less creamy.
