Throw enough tater tots in a casserole dish to cover the bottom. Put them in the oven on low heat until they are thawed. Mash them into a crust that covers the bottom and comes up on the sides of the dish.
Pour your egg mixture in that with sausage, bacon, cheese or whatever you like and bake.
I don't have the recipe, but my mom does pretty much the same, but layers the bottom of the dish with bread rather than pototoes. I have never had one with potatoes, but I don't like them for eggs, so for some people that might be an option.
The best egg cassarole I have had contains eggs, tons of jack cheese, and green chiles.... eggs and green chiles together.... mmmm. I will try to find it and post.
Try chopped green chiles, onions, cilantro, chopped up corn tortillas, cheese and browned sausage, Season with a little chilli powder, cumin and garlic powder.
I actually saute the onions and tortillas for a few minutes in a little butter first.
Oh and put the cheese in first.
That way it will not burn the top of it.
Here's what I did this weekend (inspired by NickDanger's Mexican breakast lasagna):
Roasted three poblanos, diced them, and put them on the bottom of a lightly buttered Pyrex baking dish, along with some lightly fried corn tortillas.
Sauteed 3 finely diced jalapenos, 1 onion, and a head of garlic. Added a pint of cream to the pan, a bunch of cotija cheese, then one package of chorizo. Cooked until the chorizo was done.
Added that to the Pyrex, along with a dozen beaten eggs (which were beaten with a touch of cream and more cotija). Layered more of the poblano and tortillas, and some cheese on top. Let it sit overnight and baked, covered, in the oven.
It was allsome (and pretty much a blatant ripoff of ND's "lasagna", but I liked how the chorizo was really well mixed in with the rest of the ingredients).
Also, using leftover pasta to make an egg frittata is excellent. My favorite has pasta, ham, asparagus, egg, and a ton of parmesan or romano cheese. mix all together, cook until brown on the bottom, then pop it under the broiler until it browns on top.
