As we all know, part of the joy of smoking is the time spent, the attentiveness, the dedication to the fire.

Why not skip the freakin' machine & simply go to a Q restaurant?

There are a lot of those out there, from what people who own thme tell me - they work as far as "cooking" but they can never really get enuff smoke to comapre to meat cooked on a real smoker.

Last guy I talke to was selling his and getting a pellet smoker.

That's actually a commercial smoker, used in professional kitchens. I've used one many times, and they do a fairly good job. I used everything from mesquite to pecan shells in them with more than acceptable results.
