In recognition of her life, I will now post my recipe for Italian Sausage and Peppers.

2 lbs hot Italian sausage
2 green bell peppers
1 yellow bell pepper
1 red bell pepper
(all peppers sliced thin)
1 large yellow onion sliced thin
5 cloves garlic, diced
1 tablespoon dried oregano
1 tablespoon dried basil
1 teaspoon crushed fennel seeds
1 large can crushed tomatoes
salt and pepper

Poke several holes in each link with a fork. In a very large skillet (with a lid) brown the sausages whole. When they are good and brown on the outside (usually takes about 10 minutes), remove and set aside. Place sliced onion in the skillet and let cook for about 10 minutes. Add the peppers and continue to cook for about another 15 minutes. While the onions and peppers are cooking, slice the sausages into bite sizes (don't worry if they're still raw on the inside, we'll take care of that). When the peppers are soft, add the garlic, spices, and tomatoes. Stir. Add the sausage and stir again. Cover and reduce heat to low or med/low depending on your stove. Let simmer for about 20 minutes. Serve over pasta of your choice. I prefer penne.
