Come on Luke Duke! I eat the bacon. I don't waste good bacon. I said 'mainly' because more than just eating a ton of bacon, which is good in and of it's own, I pour off the drippings and use them in cooking. I know I am not the only one. It is actually something that has been done for decades in the South. Whenever I cook up some spinach or beans or whatever I have drippings ready to go ahead and cook them with. I could say "I keeep rendered bacon on hand", but that sounds about as uptight as can be. Rendered bacon is used in a great number of recipes. I basically just render it beforehand and have it ready to go.
