In New Mexico I like pots with posole, green chile stew or chili con carne. You don't want to bring them to a full boil -- just let 'em simmer awhile. It takes a while longer to cook at the higher altitudes, but everything tastes better in the clear, mountain air.

Are people from New Mexico called New Mexicans? Because that seems like a bit of an insult to people from Mexico. It almost sounds as if we got tired of mexicans, so we got some new ones, and that's bad.
